When in Mail App > Window > Previous Recipients.    Highlight by clicking on name and choose Remove from List.

To Double Click or to Triple Click?

Place the cursor on any word.   You double click to highlight a word.   You triple click to highlight an entire line or paragraph.

Enlarge Text in Mail

When generating a new Mail message, or doing a Copy & Paste from somewhere else, and the text is too small, highlight the entire message and do a CMD plus +.
